voluto dedicarsi personalmente alla preparazione del Vino Cotto.
Ha scelto la legna di quercia da far stagionare per alimentare i fuochi che sotto i paioli di rame avrebbero dovuto cuocere lentamente il mosto, ottenuto
dalla pigiatura dei grappoli di Montepulciano. Dall’affinamento e successiva maturazione in botti di legno, dal mosto cotto sarebbe nato dopo alcuni
anni il VINO COTTO. E’ così che oggi Nonno Antonio, a quasi 95 anni, è felice e commosso nel presentare un prodotto che ha fortemente voluto.
